Phytic acid is the principal storage form of phosphorus in many plant tissues, especially bran and seeds. Phytate is not digestable to humans and soaking nuts and seeds and fermenting grains before eating them will facilitate their digestion by breaking down the phytic acid. Not soaking and fermenting chelates and makes unabsorbable certain important minor minerals such as zinc and iron, and macro minerals such as calcium and magnesium.
