Carrot Dill Dressing


A long time favorite dressing of mine inspired by Angelica's Kitchen in NYC. 

Blend: 

1T shallot, chopped

1 cup peeled and grated carrots

2t peeled and chopped ginger

1/4t mustard powder

2t dry or fresh dill

2t tamari

2T apple cider or 1/2 an apple chopped

4T apple cider vinegar

6T (4 work well too) olive oil

(optional) 1t toasted sesame oil. 


I love this dressing over shaved fennel and field greens.
